Half Shell Green Lipped Mussels

Mussels on the half shell: plump, glossy flesh in a deep gold-orange, edged with a paler frill, set in shells that are blue-black and lacquer-smooth on the outside. They are arranged in a ring on a white plate on a wooden table, and again on a dark plate.

The flesh is tender and briny-sweet. Steam or grill them to warm them through, fold them through pasta or a cream sauce, or serve them cold with lemon.
