Delicate Fresh Silver Whitebait Fish

Small, slender fish, almost wholly translucent white with a faint silver sheen along the back and a fine dark eye. They are delicate enough that the line of the spine shows through the body. Shown heaped on a white plate with a scatter of chopped green herb, in shallow dishes on a counter, and piled on a white board with a tray of ice behind.

Whitebait need almost no cooking. Dust them in flour and fry them in a hot pan for a minute until they crisp, drop them into a light broth at the end of cooking, or fold them through an omelette.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
